da dolci che ricordano la succulenta tradizione medievale (es: certosino, panone, panpepato, ecc…) a dolci che risentono della diffusa cucina contadina (torta “taiadela” o ricciolina, torta di riso, crostate di frutta, lievitati, ecc…) o montanara (es: castagnacci, dolci a base di ricotta, il croccante, ecc..).&lt;br /&gt;Nuotando in questo mare di ricette e facendo un sondaggio all’interno dei nostri locali, la scelta del dolce tradizionale caratteristico è inevitabilmente caduta sulla torta di riso presentata poi destrutturata come dessert al piatto (monoporzione).&lt;br /&gt;Le praline sono invece frutto di uno studio meticoloso che ci ha portato con il primo cioccolatino ad abbinare un freschissimo yogurt intero naturale, ai frutti rossi (ingredienti delle nostre campagne), e, con l’altro cioccolatino, a valorizzare ingredienti tipici dell’Appennino e delle pinete del lungomare adriatico (pinoli).&lt;br /&gt;In ogni caso l’obiettivo è sempre stato quello di effettuare abbinamenti tali da creare il massimo piacere stimolando la vista, l’olfatto, il tatto, il gusto, ma soprattutto il cervello.&lt;br /&gt;Infatti, in un panorama culinario dove la penalizzazione degli aromi ricostruiti in laboratori chimici sta portando ad un progressivo impoverimento sensoriale (supportato anche dalla perdita di esperienze legate all’approccio con la natura), abbiamo indirizzato la nostra ricerca verso profumi autentici, cercando di soddisfare le necessità dettate dall’emotività puntando su morbidezza, suadenza, coerenza sensoriale.&lt;br /&gt;Il prodotto risultante è pensato per un consumatore / cliente che deve soddisfare bisogni specifici sulla base del momento che sta vivendo: non è mai un individuo indifferenziato nella massa.&lt;br /&gt;Per questo abbiamo cercato di far raggiungere il piacere già lavorando sull’immagine, sull’aspetto e sulla confezione per poi farlo esplodere in valutazioni intrinseche sensoriali.&lt;br /&gt;Ha fatto da sottofondo in questa ricerca la musica: l’Emilia Romagna è infatti la patria di tanti generi musicali.&lt;br /&gt;Dalla musica lirica (le terre verdiane hanno dato i natali in tempi recenti a Luciano Pavarotti) alla musica leggera (Dalla e Morandi, Ligabue e Zucchero, Vasco Rossi e Laura Pausini, solo per citarne alcuni) fino alla caratteristica musica da balera (il liscio di Raul Casadei).&lt;br /&gt;Ecco il perché della scelta della nota musicale come motivo ricorrente nel tempo e nello spazio.&lt;br /&gt;Infatti la musica è sicuramente un trait d’union tra sacro e profano, classico e moderno, passato e presente: chi non ha mai canticchiato cucinando?&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;TORTA DI RISO NELLA TRADIZIONE&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;/p&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;&lt;/span&gt;&lt;img id="BLOGGER_PHOTO_ID_5230610529319847410" style="DISPLAY: block; l’ingrediente principe resta il riso.&lt;br /&gt;Il riso proveniva dalle risaie dove le mondine (anche molto giovani) lavoravano per mesi tra l’acqua dei campi e i canti, ricompensate da qualche spicciolo e da qualche sacco di prodotto da consumare durante l’inverno.&lt;br /&gt;Le nostre nonne emiliane ci hanno insegnato il valore di questi ingredienti, dando loro importanza storica ed emozionale.&lt;br /&gt;Ogni volta che sentiamo parlare di questo dolce o ne mangiamo un boccone, nella nostra mente affiorano emozioni personali, si scatenano meccanismi tali per cui vengono evocati ricordi e stati d’animo risalenti ad esperienze piacevoli della nostra infanzia (come il sorriso della nonna, il profumo dell’amaretto, una strofa di una canzone canticchiata tra i fornelli, ecc…), che creano, non solo un ritratto oggettivo di piaceri voluttuari, ma anche soggettivo ed affettivo.&lt;br /&gt;La torta di riso è, per ogni emiliano D.O.C., un “dolce della memoria”.&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;"&gt;&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;TORTA DI RISO CREATIVA&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:180%;"&gt;Abbiamo scomposto gli ingredienti base della ricetta tradizionale creando singoli alimenti che vanno degustati separatamente.&lt;br /&gt;Ognuno trasmette dei messaggi ai nostri sensi.&lt;br /&gt;Abbiamo accostato un bicchierino di caffé espresso “frozeen” come bevanda in crustas di amaretti che aggiunge un piacere fresco e moderno e &lt;a href="http://2.bp.blogspot.com/_NzjlU_zOnPc/SJbdK-YyPAI/AAAAAAAAAE0/m7ID86PEbKg/s1600-h/Torta+di+riso+creativa.bmp"&gt;&lt;img id="BLOGGER_PHOTO_ID_5230611197852793858" style="FLOAT: left; MARGIN: 0px 10px 10px 0px; CURSOR: hand" alt="" src="http://2.bp.blogspot.com/_NzjlU_zOnPc/SJbdK-YyPAI/AAAAAAAAAE0/m7ID86PEbKg/s400/Torta+di+riso+creativa.bmp" border="0" /&gt;&lt;/a&gt;si amalgama alla perfezione con la classicità del dolce.&lt;br /&gt;Ora consumiamo a breve distanza prima il dolce (morbido e croccante) e poi la bevanda: si sprigionano aromi nuovi e profondi, che si percepiscono solo quando avviene una fusione che agisce a livello percettivo ed emozionale lasciando una sensazione di pulizia nella bocca, e arricchisce la gamma aromatica dei singoli prodotti.&lt;br /&gt;Ascoltiamo ora la potenza degli aromi che il dolce e la bevanda hanno in comune e che permettono un rafforzamento vicendevole: l’amaretto infatti si sposa magicamente con il caffé che a sua volta possiede naturalmente l’aroma di mandorla tostata.&lt;br /&gt;Assaggiare e degustare questo dessert al piatto ci porta ad assaporare la perfezione, in quanto i prodotti abbinati non hanno difetti e spaziano nell’immaginaria linea temporale tra passato, presente e futuro.&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;"&gt;&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;PRALINA STAMPATA CONTESSA MATILDE&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:180%;"&gt;E’ un prelibato cioccolatino che racchiude in sé i sapori della nostra sana agricoltura padana, realizzato in onore della contessa Matilde di Canossa (1046 – 1115).&lt;br /&gt;Questa scelta non è affatto casuale, infatti la rossa contessa fece dono ai contadini meno abbienti nativi di queste terre, di un fondo di partecipanza agraria che ancora oggi stimola i contadini a non lasciare incolti i territori, ma a coltivarli e a valorizzarli.&lt;br /&gt;Ogni 20 anni i “capi” di terreno vengono ridistribuiti tra i capostipiti delle famiglie aventi diritto da disciplinare.&lt;br /&gt;Ascoltiamo il sapore dello zucchero delle barbabietole quando vengono sradicate dalla terra, il retrogusto della menta raccolta lungo l’argine del fiume Reno mentre i ragazzini corrono e schiamazzano sulle sue lussureggianti rive. &lt;a href="http://4.bp.blogspot.com/_NzjlU_zOnPc/SJbdcZjmXII/AAAAAAAAAE8/zYojS1nOUXs/s1600-h/Pralina+Contessa+Matilde.bmp"&gt;&lt;img id="BLOGGER_PHOTO_ID_5230611497203686530" style="FLOAT: right; MARGIN: 0px 0px 10px 10px; CURSOR: hand" alt="" src="http://4.bp.blogspot.com/_NzjlU_zOnPc/SJbdcZjmXII/AAAAAAAAAE8/zYojS1nOUXs/s400/Pralina+Contessa+Matilde.bmp" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;Lasciamoci avvolgere dal vellutato ripieno di yogurt fresco naturale ottenuto con il latte intero vaccino emiliano di alta qualità (“è quello della Lola!”).&lt;br /&gt;Infine la freschezza dei frutti rossi: le zuccherine fragole della campagna ferrarese bonificata ai tempi del fascismo, le pregiate e uniche ciliegie di Vignola, le quasi introvabili e profumatissime more di gelso maturate al sole, conferiscono a questa pralina caratteristiche decisamente alternative al classico cioccolatino e la proiettano anche verso l’ambitissimo consumo estivo.&lt;br /&gt;Il matrimonio degli ingredienti prescelti, avvolti in una sottile e croccante camicia di purissimo e pregiato cioccolato fondente, ci ha regalato la sublime esplosione di delicate sensazioni che abbiamo memorizzato come termine di paragone per soddisfare la richiesta di “qualcosa di buono” (senza disturbare Ambrogio!).&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;"&gt;&lt;/span&gt;&lt;/p&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="justify"&gt;&lt;span style="font-size:180%;color:#ff6600;"&gt;PRALINA RICOPERTA ANITA&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:180%;"&gt;Classicissimo cioccolatino ricoperto: racchiude al suo interno un particolarissimo pralinato ai pinoli tostati che personalizza il prodotto conferendogli quel carattere necessario a toglierlo dall’anonimato.&lt;br /&gt;Dopo averlo assaggiato, apprezziamo il bilanciamento tra parte morbida e parte croccante, mentre la nostra mente vola ai ricordi d’infanzia quando con la famiglia si villeggiava sulla lunga costa adriatica e ci si riparava all’ombra delle vicinissime pinete. &lt;a href="http://3.bp.blogspot.com/_NzjlU_zOnPc/SJbd0dF5tdI/AAAAAAAAAFE/s2iDR6YtWoA/s1600-h/Pralina+Anita.bmp"&gt;&lt;img id="BLOGGER_PHOTO_ID_5230611910469727698" style="FLOAT: left; &lt;span style="color:#ff6600;"&gt;e freschi&lt;/span&gt; classici e moderni (circa quaranta proposte e più) che, un po’ come accade nell’alta moda, vengono creati “ad hoc” per ogni ricorrenza oltre ad offrire una piacevole e golosa prova di assaggio giornaliera.&lt;br /&gt;Non è stata mai abbandonata nel tempo (anche quando sembrava ormai anacronistica) la proposta delle &lt;span style="color:#ff6600;"&gt;paste al trancio&lt;/span&gt;
